- 1 lb ground Italian sausage
- 8 large eggs
- 3/4 cup shredded cheddar cheese
- 1/4 cup heavy cream or milk
- 2 1/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon black pepper
- 3/4 teaspoon sea salt
- 1/2 cup cold unsalted butter (cut into small pieces)
- 1 cup milk
- 1/3 cup plus 2 tablespoons pure maple syrup
- 2–3 scallions (thinly sliced)
- Optional: vegetables (spinach, bell peppers, zucchini), cheeses, herbs, spices
Instructions
- Cook sausage until browned, drain grease.
- Mix sausage with eggs, cheese, optional vegetables.
- Combine dry ingredients.
- Mix wet and dry ingredients.
- Preheat oven to 350°F.
- Grease muffin tins, fill 3/4 full.
- Bake for 14-16 minutes.
- Cool slightly before serving.
