- 6 large eggs
- 8 oz sharp Cheddar cheese, shredded
- 8 oz mozzarella cheese, shredded
- 1 ½ cups plain whole yogurt (Greek preferred)
- 1 lb ground pork sausage, seasoned (no casings)
- 10 slices bacon, cooked and crumbled
- ½ tsp kosher salt
- 16 slices pickled jalapeño, seeds removed and chopped
- Optional: vegetables (spinach, bell peppers, onions), meats (turkey sausage, ham), cheeses (feta, Swiss), fresh herbs
Instructions
- Cut English muffins into small pieces.
- Brown sausage, combine with muffins and cheese.
- Whisk eggs, yogurt, salt, pepper.
- Combine egg mixture with muffin mixture.
- Pour into a greased 9×13-inch dish.
- Let sit for 30 minutes.
- Bake at 375°F for 40-45 minutes.
- Cool slightly before serving.
