5Roast: Roast in the preheated oven for approximately 28 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C) and the potatoes are tender.
6Serve: Remove from oven and let rest for a few minutes before serving. Garnish with fresh herbs or lemon wedges if desired.
